Yesterday as we celebrated our first Semi-Vegetarian Christmas with a mostly veggie and all dairy-free dinner menu, I was a little apprehensive about how my dessert option would be received by my carnivorous family with changing bellies. We have been on our vegetarian and dairy-free journey for 4 months now, and while the decision to skip the stuff we prefer to not eat sometimes is based on circumstance, I was pleasantly surprised that no one missed the traditional Christmas Dessert menu this year that would normally be filled with sugar, butter and other not-so-great for you ingredients.
So yesterday as we were finishing up our Christmas dinner, I served my dessert alternative which turned out to be a Mixed Fruit Christmas Winner!!
- 12 peeled and separated, organic Mandarin Oranges
- 2 diced organic Gala Apples (leave the skin on)
- 2 diced organic Granny Smith Apples (leave the skin on)
- 3 diced organic Red Pears (leave the skin on)
- 3 peeled and diced organic Kiwi Fruit
- 1 organic Lemon, juiced
In a large serving bowl, combine all the fruit and finish by tossing in the lemon juice and combining all fruit. Cover and refrigerate until ready to serve. Lemon juice will keep the apples and pears from turning brown.
This is super simple, except for the peeling and dicing, and a great alternative also for those that may be on a stricter no-sugar diet but still want to enjoy a little sweet meal follow-up indulgence.
