Veggie Lentil StewIngredients

  • 1 cup Lentils (soaked overnight)
  • 2 Zucchini, diced
  • 1/2 Yellow Onion, diced
  • 1 cup Bok Choy, chopped (even the stem goes in diced)
  • 1 cup Grape Tomatoes, diced
  • 2 cups Vegetable Broth (I used homemade veggie soup stock I made)
  • 4 cups Water
  • 4 cloves fresh Garlic, minced
  • 2 tbsp Badia Complete Seasoning
  • Salt/Pepper to taste

Combine all ingredients into slow cooker and set to cook for 6-8 hours.  If you do not have a slow cooker with a timer, set the temperature to high and cover.  I let my soup cook for 7 hours and then when I served it I added a few dashes of hot sauce to give it a little kick of heat.
