Since cutting my dairy intake to less than 5% of my diet, I find myself craving the savory cheesy goodness of dishes like cheddar scones (or biscuits here in the South) or the amazing side of Mac & Cheese. We have loved incorporating the product line from Go VEGGIE! and their dairy-free and lactose free options. One of our favorite kitchen pantry staples is the Parmesan Topping which I put in dishes or use for a great topping alternative to the full dairy product.
So when I got the opportunity to work directly with GO VEGGIE! for a recipe share I certainly jumped at the chance. Though I have had an extremely busy schedule these days, I finally found the time to throw together this recipe that I’ve had on my mind for a few weeks, SAVORY Cheddar & Chive Scones. Super easy and packed with yummy flavor!
- 3 cups All-Purpose Flour
- 1 1/2 tbsp baking powder
- 1 teaspoon salt
- 7 ounce package GO VEGGIE! Cheddar Shreds
- 8 ounces GO VEGGIE! Plain Cream Cheese, softened
- Fresh Chives, chopped
- 1 cup unsweetened almond milk
- 1 large egg
Preheat oven to 400°. Combine flour, baking powder, and salt in a large bowl. Add the shreds and cream cheese and fold with a fork until combined. Add chives and combine with a fork until combined. Beat almond milk and egg in a separate bowl then fold into the dry ingredients. Mix gently until a soft dough forms. Add up to 1/2 cup additional flour if the dough is too sticky. On a floured surface pat the dough into a circle approximately 1-inch thick.
With a sharp knife cut the circle into 8 or 12 wedges and place them on a heavy-duty baking sheet lined with parchment paper. Brush tops and sides with the egg glaze or melted butter alternative (I use Soy-Free Earth Balance) if desired, and bake for 20 to 25 minutes until golden brown. Cool and serve or cool completely and refrigerate or freeze in a heavy plastic storage bag or airtight container.
