Chicken Sliders with Mango Slaw

Ingredients ~

  • 1 lb ground Chicken, breast meat
  • 1/4 cup Italian bread crumbs
  • 1/2 tsp Kosher Salt
  • 1/2 tsp Fresh Cracked Pepper
  • 1 Egg White
  • 1 package, Shredded Cabbage
  • 2 tbsp Bolthouse, Tropical Mango dressing
  • 6 mini dinner rolls of your choice (I used Publix Bakery, Potato Rolls)

For the Chicken Sliders ~

In a large bowl, combine ground chicken, Italian bread crumbs, egg white and salt and pepper.  Incorporate all ingredients and form mini burger patties.

Using a stove top grille skillet or non-stick frying pan, heat pan to medium heat.  Once pan is heated add patties and cook on one side until edges begin to appear translucent.  Turn and cook other side equal amount of time.  Brown as desired and serve on the potato rolls with your favorite condiments.  I chose homemade Roasted Walnut Pesto, a slice of plum tomato and a slice of red onion.

For the Mango Slaw ~

Combine Angel Hair Cabbage and Tropical Mango dressing and mix until all dressing is incorporated.  You may add more dressing if you would like, just note, a little goes a long way and you don’t want to make your slaw soggy.

Plate with your sliders and enjoy!

Quick and Simple go-to meal!  This recipe yields 6 Chicken Sliders and 2 cups of Mango Slaw.
