I have totally enjoyed venturing out into the recipe land with the Go Mighty Nut Powdered Peanut Butter products over the last couple of weeks.  From the Thai inspired Peanut Sauce recipe, to yesterday’s Protein Pancakes, it has been a great opportunity to try yummy peanut things without all the junk and calories of regular peanut and powdered peanut products!

BOSU & TreatsThis week I’ve planned my meals more than I have in quite some time.  Trying to kick the added sugar and no fast food in moments of desperation due to POOR MEAL PLANNING, these little additions can be a great “sweet tooth” curber!  Yesterday I wanted to try the sweet recipe I alluded to in my post, but I wasn’t quite ready to fully commit to the work, so I opted to see what the product would turn out like in a vegan protein ball recipe that I generally make with just vanilla protein and a few other ingredients and just medjool dates for sweetener.  These little balls of goodness did not and do not disappoint!  I even shared them with a few of my students this morning and some girlfriends that agreed!

Ingredients –

  • 6 pitted medjool dates (you can usually get them at your local food coop)
  • 1 tablespoon Cacao Powder
  • 1 scoop Vanilla Protein Powder
  • 1 large scoop of Mighty Nut Vanilla Powdered Peanut Butter
  • 1/2 cup shredded unsweetened Coconut
  • 1/4 cup water (just to get things moving in the processor)

In a food processor (or blender if you must) combine all dry ingredients, add the water last.

Pulse process it until the powders combine with the liquids and then turn to low or medium and let process for approximately 1-2 minutes.  Ingredients will clump into a ball, then you’re all set.

Remove from processor and separate into little portions.  I portioned out 9 protein balls from this recipe.  You can make them bigger or smaller, depending on your size of indulgent!

Place on wax or parchment paper and sprinkle with extra shredded coconut, if desired, and place in freezer for approximately 1 hour.

Remove and transfer to airtight container and place in refrigerator until ready to eat!
