My fearless boot camp leader and cycling instructor, Shannon Colavecchio is always giving healthy options for what to eat for fueling the body through workouts and daily life.  Here’s my take on one of her no bake wonders that is all the yummy goodness of those $3 store-bought protein bars!  You can check out her other healthy recipe recommendations by visiting her blog at Badass Fitness/Diet.

2 cups quick oats (I used EarthFare Bulk Steel Cut)
1/2 cup MaraNatha raw almond butter
1/2 tablespoon ground cinnamon
4 scoops protein powder
1 teaspoon kosher salt
4 tablespoons chocolate chips (optional)
3 tablespoons tupelo honey (optional)
1 tablespoon lecithin granules (source of Omega-3)
1/2 cup water

In a large bowl, combine all the ingredients together with your hands until it forms a dough.

Line a square 8-inch pan with wax paper and press the dough into it using your fingers.

Freeze for at least 30 minutes then remove and cut into 12 – 2″ squares.  I wrapped mine individually in aluminum foil and keep in the freezer.  A great grab and go for fueling before exercise.
