Time to get back on track, the good eating plan track that is!  I’m so excited to have the opportunity to work with Peanut Butter & Co. with their newly introduced line of Mighty Nut Powder Peanut Butter, with low-fat, gluten-free, certified vegan and 6 grams of protein per serving!

As I arrived back home from Chicago, this awesome product was waiting for me.  I couldn’t wait to get started putting together a savory and a sweet (coming later) recipe idea to share with readers and followers!  So craving a local restaurant favorite, Tuesday night I opted to put together a little Thai inspired salad with a Peanut Sauce dressing that is super simple and packed with flavor.  And the salad is so versatile you can add additional ingredients to make it even more hearty for a meal instead of a side dish.

Here’s the “skinny” on putting it together!

For the Salad –

  • Baby Bok Choy, rinsed & chopped
  • Romaine Mix, chopped
  • Carrots, diced
  • Yellow Pepper, diced
  • Green Onion, chopped
  • Red Onion, chopped
  • Tomatoes, sliced
  • Bean Sprouts
  • Grilled protein of choice (optional)

Mighty Nut Protein Powder OriginalFor the Peanut Sauce –

  • 2 1/2 tbsp Mighty Nut Powdered Peanut Butter Original
  • 2 tbsp Dry Roasted Unsalted Peanuts, chopped
  • 4 tbsp Aged White Wine Vinegar (or Rice Wine Vinegar)
  • 2 tsp Soy Sauce
  • 1/2 tsp fresh Ginger, grated
  • 1 Garlic Clove, grated
  • 2 tsp Cane Sugar (or more if you like it a little sweeter)

In a bowl combine powdered peanut butter, vinegar and soy sauce and whisk together.  Next, add ginger, garlic and sugar.  If too stiff add a little more vinegar.  Finally, once everything is combined add peanuts and set aside until ready to serve.
