This week seems to be my week for making all the salads!  Labor Day I made my normal avocado salad with capers and mixed greens topped with my favorite homemade balsamic garlic dressing.  So last night when the Hubs wanted his weekly side dish of roasted zucchini, I opted to throw together a Greek style salad to go with it.  I even picked up a little olive tapenade hummus and some Naan bread.

Greek Meatless dinnerIngredients

  • Fresh Romaine Lettuce, chopped
  • Red Onion, sliced
  • Salad Cucumber, sliced
  • Roasted Sun-dried Tomatoes, diced
  • Grape Tomatoes, sliced
  • Garbanzo Beans, rinsed and drained
  • Whole Pepperoncini peppers
  • Pitted Kalamata Olives, sliced
  • Feta Cheese crumbles
  • Lite Greek Dressing

In a large bowl, start with lettuce and then layer salad and refrigerate until ready to serve.  I like to serve the Greek dressing on the side in case there are leftovers and it won’t be too soggy to eat another day.
