2013 was a great year for making changes, in both eating and lifestyle. So for New Year’s Dinner 2014 I decided to keep in our new routine and change up the menu. This year we are opting out of all meat and going all veggie (with some black beans instead if black eyed peas).

Here’s the fresh crisp Prosperous New Year Salad we have on the menu –

6 cups chopped organic Flat Leaf Kale
1/2 cup seed & nut mixture
1 diced organic Granny Smith Apple
1 diced organic Red Pear
1 fresh organic Lemon, juiced

Combine all salad ingredients in a large bowl and toss in fresh lemon juice to keep salad green and fruit from turning brown. Cover and refrigerate until ready to serve. Choose a sweet salad dressing to serve with salad. I choose a Wild Blueberry Dressing for our Prosperous New Year Salad because it is full of antioxidants.

Toss and enjoy with your favorite meal as a side dish or the main course!
