We love Mexican Dinner night in the Means house, but the options are not always healthy when it comes to what to fix.  Recently, I was left with the option to fend for myself due to my husband’s prior evening obligations with his sons, so I chose to give this little skillet a shot.  Turned out fantastic and the Hubs plans changed and he also ended up sharing this dish for dinner, which he loved!  And the best part, QUICK AND EASY!

  • 1 lb. browned grass-fed Beef
  • 1/4 cup diced Onion
  • 1/2 diced Anaheim Pepper (with or without seeds)
  • 1/4 cup Black Beans
  • 1/2 cup diced Sun Gold or Cherry Tomatoes
  • 1 cup water
  • 2 tbsp ground Cumin
  • 1 tbsp ground Garlic
  • 2 tbsp ground Chili Powder
  • Salt/Pepper to taste

In a skillet, combine all ingredients and cook over medium heat until most of the liquid has cooked out.  Serve over lettuce for a taco salad option or serve over Blue Corn Tortilla Chips and top with fresh avocado.

This one is sure to get you over your Tex-Mex craving!

    1. AWESOME! My husband is not a spicy food fan, but he actually didn’t mind the spicy flavors in this dish. He made a salad out of it and loved it. Enjoy!! 😉

    1. Emma, you can use chicken or any other meat of choice. There are a lot of ground Chicken and ground Turkey options available these days. 🙂
