Mango Cabbage Broccoli Salad with Shallot Citrus VinaigretteOne of my new favorite recipes on my families #PoweredByPlants journey!

Ingredients –

For Salad

  • Organic Broccoli Salad
  • 1/2 head Organic Red Cabbage, chopped
  • 1 ripe Organic Mango, diced

For Vinaigrette

  • 2 small Organic Shallots, diced
  • 1 clove fresh Garlic, minced
  • 2 tablespoons Extra Virgin Olive Oil
  • 2 tablespoons Local Honey (I used Tupelo Honey)
  • 2 tablespoons fresh Lemon Juice
  • Salt/Pepper to taste

Preparation –

Combine all ingredients for salad in a large bowl.  In a separate small bowl, whisk together vinaigrette ingredients and pour over salad mixture.  Toss until mixture is well incorporated and refrigerate for 30 minutes to 1 hour before serving.  Great as a side dish or as a dinner salad alternative.  You can also chop dried mango slices if fresh mango is not available in your area, but make sure  to use the organic option.
