Veggie MarinaraIngredients –

  • 2 quarts Organic Red Tomatoes (I used my canned variety from last season)
  • 2 medium Organic Zucchini, diced
  • 1/2 large Yellow Onion, diced
  • 1 pint Organic Portobello Mushrooms, diced
  • 1 large bunch, Organic Basil, chopped
  • 1 large bunch, Organic Flat Leaf or Italian Parsley, chopped
  • 3 fresh Garlic Cloves, minced
  • 1 small can Organic Tomato Paste (optional)
  • 2 tablespoons Italian Seasoning mix (basic ingredients with no additives)
  • Salt/Pepper to taste

In a large pot add all  ingredients except basil, parsley and salt/pepper and cook on medium-high for approximately 25 minutes, checking/stirring often.  Reduce heat to medium-low and partially cover pot with lid and cook for 2 hours checking often to prevent scorching.  Finally add basil, parsley and salt/pepper for the last 30 minutes of cooking.

Serve over roasted spaghetti squash or your favorite pasta noodle option/alternative.  Also great base for Vegetable Ziti or Vegetable Lasagna.  Looking for a dairy free cheese alternative?  We used Daiya Foods Dairy Free Shredded Mozzarella in the dish pictured above.  (Dairy-Animal Product Free Baked Ziti)
