I do not know about you, but often I find it hard to turn down the carb-goodness of Garlic Mashed Potatoes when they are available as a side dish at my favorite local restaurants or even at a family dinner.  But recently finding that carb rich foods and pastas do not necessarily agree with me or my body, I continued on my pursuit at “mock” alternatives and I tried a take on them using steamed cauliflower.  HOLY YUM was that a great choice!

A few things before I share the yummy recipe.  When I researched a recipe alternative, most of the recipes called for the cauliflower to be boiled, which I feel you lose a great bit of your nutrients when boiling any vegetable.  So I opted to steam my head of cauliflower.  I purchased a medium-sized head of cauliflower and cleaned away all the root and leaves and chopped my cauliflower into chunks.  I placed in a covered corning ware dish to place in the microwave then added my favorite, better for you, spray butter option and then steam for about 9 minutes.  I kept checking the consistency every 3 minutes to make sure that I did not over cook them.

Now for the recipe –

Mock (Cauliflower) Garlic Mashed Potatoes

1 head cauliflower, steamed until soft
3 whole garlic cloves, skin removed
1 tablespoon nonfat Greek yogurt
1 tablespoon Unsalted chicken stock (reduces the amount of sodium your consuming)
1/4 cup shredded Parmesan cheese (not the imitation powder in the silver can)
1/2 teaspoon badia complete seasoning
1/2 teaspoon garlic salt
Fresh cracked pepper

Combine in blender or food processor until smooth.  I combined my mixture in the Ninja mixer, it is amazing tool for when you do not feel like getting out the food processor and having a big clean up.  Yields 4 servings.  I chose to side mine with a broccoli slaw salad and Sundried Tomato & Balsamic Vinaigrette.  You should also note, they pack a little spicy bite, so be ready if you do not necessarily enjoy spicy or peppery foods.
