When we traveled to Jacksonville, FL for marathon weekend a few weeks back, my oldest stepson suggested lunch at his favorite food coop which also had an amazing Deli. As we waited for our sandwiches to be made, we opted to try a vegan apple salad that they make and it was amazing! Then this week as I visited one of our local markets I searched for something similar but was not successful in finding it. So I opted to put together my own version but with the current organic seasonal fruit available. It’s super simple and full of flavor and tastes just like Grandma’s without all the ‘not so good for you’ ingredients!

Ingredients –
2 organic Granny Smith Apples, shredded
2 organic Pears, shredded
2 organic Lemons, juiced
1 cup organic Dried Cranberries
1 cup roasted Walnuts, chopped
3-4 organic Strawberries, diced
2 tablespoons Vegan Mayonnaise
Kosher Salt/Cracked Pepper, to taste

In a large bowl combine apples and pears and toss them in the lemon juice. Next add cranberries, strawberries and walnuts and mix together. Finally add the Vegan Mayonnaise and salt/pepper to taste. Cover and refrigerated for 2 hours and then it’s ready to serve.

Great recipe option for a snack, BBQ or family dinner side dish.
