This weekend as we were preparing for college game day at home, we opted to leave out the meat options and grill some of our favorite black bean burgers and instead of fries we opted for some sweet potato fries instead.  I wanted to add a little spice to my meal so I headed to the kitchen to concoct something to flavor my burger and please my taste buds.  What I came up with totally delivered and it is 100% Vegan friendly, which was a bonus to boot!

Ingredients

  • 2 tbsp Soy-Free Vegan Mayo
  • 1 tsp prepared horseradish
  • 1 tbsp Sriracha
  • 1 tsp Kosher Salt
  • 1 tbsp fresh Lemon Juice

In a bowl combine all ingredients and whisk together.  Cover and refrigerate until ready to serve.  Great mayonnaise alternative and I loved it on my crispy sweet potato fries!

I find it incredibly funny that the moment you say Vegan that people either turn up their nose or say “that’s too hard” and “it’s not healthy” but choosing to go Vegan is all about making healthy option choices.  Just because you go Vegan does not mean you have to rely on a bunch of processed foods, it means you just  have to think about what you are eating a little more.  I really like that, less processed foods and healthier options, THAT’S what our Vegan household is all about!

So the next time someone says “I’m Vegan” get more info before judging their choice and maybe give some of their flavorful foodie options a try!  You may be pleasantly surprised at how much you enjoy it.
