It’s Monday and you know what that means, time to share an easy vegetarian recipe to add to your weekly dinner rotation!  This week, let’s go a little Asian style with my Spring Go Green Veggie Stir Fry.  The ingredients are super simple and the only thing that will take time is a little chopping before heating up that pan.


  • 10 oz package Eat Smart California Slaw
  • 10 oz package Eat Smart Broccoli Florets
  • 2 chopped Organic Zucchini
  • 1 diced Organic Leek
  • 1 diced Organic Yellow Peper
  • 1 cup diced Organic Portobello Mushrooms
  • 1 tbsp Extra Virgin Olive Oil
  • 1 tsp organic Sesame Oil
  • 2 tbsp organic Teriyaki Sauce
  • 2 tbsp organic low-sodium Soy Sauce
  • 1 tbsp Coconut Aminos
  • 1 tsp Badia Complete Seasoning
  • 1 1/2 tsp fresh or ground Ginger
  • 1 tbsp Sesame Seeds (optional)
  • Kosher Salt/Cracked Pepper, to taste

Vegetarian Stir FryIn a large skillet or WOK, add olive oil and all vegetables and heat over medium to medium-low heat.  Using tongs or 2 spoons, toss veggie mixture for 5-10 minutes.  Next add Sesame Oil, Teriyaki Sauce, Soy Sauce, Coconut Aminos, Complete Seasoning and Ginger and combine thoroughly.  Continue cooking until desired tenderness of veggies and add optional sesame seeds and salt/pepper as desired.  I like to serve this with a side of rice or Udon Noodles.  It is a healthy alternative that is a favorite in our house especially with spring coming and all the green veggies coming into season!  Enjoy!
