Super Simple “Full of Flavor” Breakfast Scramble

*Please excuse my crappy photo, I was starving!*

  • 2 Pastured + Organic Eggs
  • 2 tbsp Poblano Pepper, diced
  • 1 tbsp Onion, diced
  • 1 Roma Tomato, diced
  • 4 Black Olives, diced
  • 1 tbsp Coconut Aminos
  • 1 tsp Ground Cumin
  • 1 tsp Garlic Powder
  • Salt/Pepper to taste
  • 1 tbsp Coconut Oil

Combine all ingredients, except coconut oil, in a small bowl and scramble together.  Heat small skillet with coconut oil to medium and add scramble ingredients and cook to desired doneness of eggs.

I enjoy this as my post workout fuel that is to be consumed no more than 30 minutes post-exercise.
