Vegan Chocolate Espresso Bars IngredientsGo-to energy snacks are a dime a dozen at times.  Maybe you find one that you love and then realize that it is full of junk or ingredients that may not agree with your digestive system during exercise.  Recently I combined a few things that I had been considering as a snack for a while and was so happy that it turned out so amazingly delicious!  It even got the thumbs up approval from our College Senior who is home this weekend to visit.  Even better, its super simple and ready to go in under 10 minutes!

Ingredients –

  • 8 pitted Medjool Dates
  • 1/3 cup unsweetened coconut flakes
  • 2/3 cup walnuts
  • 1/3 cup carob nibs (vegan chocolate)
  • 1/3 cup espresso beans
  • 1 tbsp unrefined coconut oil
Vegan Chocolate Espresso BarsCombine all ingredients into food processor (may use blender in replacement of processor) and pulse until all ingredients are combine and a little sticky. Transfer to aluminum foil and press out to 1″ and wrap in foil.  To make sure that it holds together I popped it in the freezer for 20 minutes or you may refrigerate for 1 hour. Remove and cut into desired servings and store in refrigerator in airtight container.

  1. I’ve been meaning to make my own “larabar substitute” since I love them and am doing the clean eating/Whole 30 – I need to find something with texture I can sub for the nuts since we can’t have nuts at home (son with allergies). Thanks for the recipe – these sound fabulous!

    1. You could certainly leave out the nuts, I just added them for a little more protein option. They turned out amazing.

      1. I love nuts and do eat Larabars with nuts at work or when out for a workout and I know he’ll be sleeping when I get home. I have to be really careful though and can’t make anything with them in my kitchen. I’ll try these!

  2. These look amazing! And I can eat everything in them – no small fete here, haha! I will probably use some sunflower seeds for my kids (they have nut allergies), minus the coffee for them of course!

  3. I’m totally trying these! My sweet tooth is on FIRE the last few days! This is DEFINITELY a better option than the thunder from down under I may have consumed last night…lol
