Go-to energy snacks are a dime a dozen at times. Maybe you find one that you love and then realize that it is full of junk or ingredients that may not agree with your digestive system during exercise. Recently I combined a few things that I had been considering as a snack for a while and was so happy that it turned out so amazingly delicious! It even got the thumbs up approval from our College Senior who is home this weekend to visit. Even better, its super simple and ready to go in under 10 minutes!

- 1/3 cup unsweetened coconut flakes
- 2/3 cup walnuts
- 1/3 cup carob nibs (vegan chocolate)
- 1/3 cup espresso beans
- 1 tbsp unrefined coconut oil
